Recipe Ingredient

  • 350g squid
  • 1 onion, halved
  • Mince finely:
  • 3 shallots
  • 2 cloves garlic
  • 12 dried chillies, soaked and seeded
  • 20g groundnuts, toasted and coarsely pounded
  • 1 tomato, quartered
  • 2 tbsp oil
  • 1 tsp sesame oil
  • Sauce (A):
  • 3 tbsp chilli sauce
  • 3 tbsp tomato sauce
  • 2 tbsp Worcestershire sauce
  • 3 tbsp lime juice
  • 1½ tbsp sugar
  • A little dark soy sauce for colour
  • 1/2 tsp salt or to taste
  • Dash of pepper

Instructions

  1. Clean squid, removing ink sacs, eyes and bone. Cut into 3x2cm pieces and score. Scald the squid in boiling hot water for 1-2 minutes. Drain and set aside.
  2. Heat oil and sesame oil. Fry shallots and garlic until lightly golden and fragrant. Add dried chillies, sauce ingredients (a) and sauté until fragrant again. Add in the squid and the onion and tomato. Stir-fry well. Mix in groundnuts and dish out to serve immediately.
