Recipe Ingredient
- 1kg fish bones
- 100g onion, diced
- 50g carrot, diced
- 40g leek, diced
- 40g celery, diced
- 1 bay leaf
- 5g white peppercorns
- 5g garlic, crushed
- 5g fresh basil
- 5g fresh dill
- 2.5g fresh thyme
- 2.5g fresh tarragon
- 20g lemon wedge
- 80ml white wine
- 5l water
Instructions
- Wash the fish bones.
- Place all the ingredients in a pot.
- Bring to the boil and simmer for 45 minutes.
- Remove and strain.
- Reserve for later use.
