Recipe Ingredient
- 1 mud crab, halved and cleaned
- 100g glass noodles, soaked until soft
- 2 tbsp oil
- 1 tbsp sesame oil
- 2 stalks spring onion, cut into 3-4 cm lengths
- 1 tbsp tamarind paste mixed with 250ml water and strained
- Ingredients (A)
- 1 tbsp dried prawns, coarsely chopped
- 2 shallots, minced
- 2 cloves garlic, minced
- 2 tbsp tom yam paste
- Seasoning (B)
- 1 tbsp sugar
- 1 tbsp oyster sauce
- ½ tsp pepper
- 1 tsp chicken stock granules
- 1½ tsp fish sauce or to taste
- 2-3 tbsp lime juice
Instructions
- Heat oil and sesame oil in a wok and fry ingredients (A) until fragrant. Pour in tamarind juice and bring to a boil.
- Transfer the spice paste into a claypot. Add crab, glass noodles, spring onion and seasoning (B). Toss until well combined.
- Serve immediately.
