Recipe Ingredient

  • 4 fresh mud crabs
  • 2 tbsp sesame oil
  • 1 tbsp chopped garlic
  • 1 tbsp chopped shallot
  • 1 tbsp minced ginger
  • 1 tbsp dried prawns, soaked and chopped
  • 1 tbsp black pepper seasoning sauce
  • 1/2 tsp pepper
  • 1 tbsp sugar
  • 1/2 tsp salt or to taste
  • 2 stalks curry leaves
  • Garnish:
  • 1 tbsp chopped spring onion

Instructions

  1. Clean the crabs and cut in half, then lightly crack the claws.
  2. Heat 2 tablespoons sesame oil in a wok and lightly brown shallots, garlic and ginger. Add dried prawns and stir-fry until aromatic.
  3. Add the crabs and stir-fry for a while. Add curry leaves, black pepper seasoning sauce, salt, sugar and pepper.
  4. Toss and fry for a while. Sprinkle in a little water then cover the wok and cook for 6-7 minutes.
  5. Remove the cover and stir-fry the crabs well until cooked through. Toss and add chopped spring onion.
  6. Dish out and serve.
