- Dressing:
- 30g yellow mustard
- 30g lemon juice
- 100g (or 1/2 cup) olive oil
- 60g Mainland Vintage Block
- sage, chopped
- salt & black pepper
- 2 to 3 tbsp water
- Sandwich:
- 400g sirloin steak
- salt and black pepper
- 2 tbsp yellow mustard
- olive oil
- 1 red onion, sliced
- 20g Anchor Unsalted Butter
- 4 pieces ciabatta sandwich loaf
- 2 red tomato, sliced
- A handful of arugula salad
Instructions
- Using a blender or hand blender, blend mustard, lemon juice and olive oil until completely emulsified.
- Then gradually add grated Mainland Vintage Cheddar Cheese, last stream in 1 - 2 tbsp water and blend until smooth and thick. Lastly adjust seasoning with salt, black pepper and chopped sage. Set aside, keep chill until needed.
- Heat olive oil in pan, season sirloin steak with salt, pepper and yellow mustard, seared steak to your preferred doneness, set aside to rest before slicing.
- Heat butter in a clean pan on medium heat until foamy, add in red onion and cook until soft, season with salt and pepper, set aside until needed.
- Slice ciabatta in half and lightly toast it. Drizzle some dressing on the cut side of the bread, layer the base with some arugula salad, tomato, sliced beef, drizzle some dressing on slice beef, top with more arugula salad and ciabatta. Enjoy!
