- 130g Anchor Unsalted Butter
- 40g icing sugar
- 1g salt
- 70g all purpose flour
- 100g corn starch
- 10g purple potato powder
- white chocolate, melted
- sprinkles
Instructions
- Preheat oven to 175C. Line a baking sheet with parchment paper
- In a large bowl, cream together Anchor Unsalted Butter, icing sugar, and salt until pale
- Add in the flours and purple potato powder and mix well
- Rest the dough for 30 minutes in the chiller then divide the dough to 10g balls
- Place the cookie balls on top of a tray and press with a fork
- Bake for 8 to 12 minutes or until cooked
- Leave out to cool, and drizzle melted white chocolate and add sprinkles
