- 100g pecan nuts (toasted & chopped)
- 120g Anchor Unsalted Butter
- 100g sugar
- 50g brown sugar
- 150g whole eggs
- 5g vanilla essence
- 150g all purpose flour
- 5g sea salt
- 2g baking powder
- 300g peach (diced)
- 50g sugar
- 10g nutmeg powder
Instructions
- Preheat oven to 180, and toast pecan nuts for 10 minutes
- Ina bowl, cream Anchor Unsalted Butter with sugars until light and fluffy
- Add in the eggs one by one and mix well. Add in vanilla essence
- Stir in flour, salt, and baking powder. Mix well
- Add in diced peaches and mix until combined
- Pour into 9" round pan and bake for 40-45 minutes
- When finished baking, sprinkle sugar and nutmeg powder on top when out of the oven
