Recipe Ingredient

  • 190g All Purpose Flour
  • 75g Anchor Unsalted Butter
  • 40g Sugar
  • 230g Egg
  • 200g Vanilla Extract
  • Salt, as needed
  • 20g Pandan Essence
  • 80g Medjool Date Paste

Instructions

  1. In a large mixing bowl, cream the Anchor Unsalted Butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract and mix until combined.
  3. In a separate bowl, whisk together the flour and salt, and gradually add into the butter mixture, until a dough forms.
  4. Divide the dough in half and mix each half with pandan essence and medjool date paste.
  5. Roll out the dough into rectangles and place one on top of the other.
  6. Wrap the dough into log shape and keep in fridge for 1 hour.
  7. Preheat oven to 180C.
  8. Cut up the log dough into 1/4 inches thick and bake for 10-12 minutes.
  9. Allow cookies to cool completely before transferring to a container.
