Recipe Ingredient
- Cookie:
- 225g Anchor Unsalted Butter
- 50g Sugar
- 50g Brown Sugar
- 50g Egg
- 5g Vanilla Extract
- 270g All Purpose Flour
- 10g Dessicated Coconuts
- 5g Salt
- 80g Medjool Dates (paste)
- Shredded Coconut, as needed
Instructions
- Preheat oven to 175C.
- Place softened Anchor Unsalted Butter in a bowl, and mix with sugar and brown sugar until light and fluffy.
- Add the egg and vanilla essence and mix well.
- Sieve in the flour and mix well.
- Add in dessicated coconut and salt, and mix well.
- Add in date paste and mix well.
- Roll out cookie dough into 3mm sheet, and cut into diamond shapes.
- Sprinkle some shredded coconut onto the cookies before baking for 10-12 minutes.
