- Cookie Dough
- 227g Anchor Unsalted Butter
- 60g Castor Sugar
- 50g Egg
- 4g Vanilla Essence
- 350g All Purpose Flour
- Date Filling (Ready Made), as needed
- Cloves, as needed
- Glaze
- 20g Egg Yolk
- 30g Egg Whites
- 10g Food Colouring, as needed
- Royal Icing
- 30g Egg Whites
- 180g Icing Sugar
- 10g Lemon Juice
- 6g Green Colouring
Instructions
- Preheat oven to 180C. In a mixing bowl, mix Anchor Unsalted Butter and Castor sugar until mixed well.
- Add in the egg and vanilla essence. Mix well.
- Sift in the all-purpose flour, and mix until dough is formed. Set aside.
- Roll 5g of date filling into balls and set aside.
- Portion dough into 10g, and cover date filling.
- Shape into shapes of fruit (apple, orange, guava, mangosteen, durian, etc). Decorate with cloves & bake for 12 minutes.
- Take out cookies and glaze with coloured egg yolk glaze. Continue baking for 5 minutes.
- Set aside to cool.
- Mix ingredients together until desired consistency and pipe on top of cookies.
