- Chicken Drumettes:
- 1kg of chicken drumettes
- 5g salt
- 1 tsp pepper
- 1 tsp chili flakes
- 1 tsp corn flour
- 1 nos egg
- Coating:
- 300g rice flour
- 300g corn flour
- 5g salt
- Chili Glaze:
- 300g lingham's hot sauce
- 100g brown sugar
- 5g garlic, grated
- 5g ginger, grated
- 15g soy sauce
- sesame oil, misc
- Garnish:
- sesame seed, toasted (misc)
- spring onion, sliced (misc)
- Mozzarella For Wrapping:
- 200g Anchor Extra Stretch+ Mozzarella
Instructions
- In a mixing bowl, mix everything until well combined, allow to marinate for 4 hours or overnight
- Prepare enough deep fry oil and preheat to 160C
- In a bowl, mix coating ingredients together. Coat chicken drumettes with flour
- Deep fry chicken drumettes until golden brown
- Brush chili glaze on all sides on the drumettes
- Sprinkle sesame seeds and spring onion
- In a non-stick pan, add mozzarella cheese and heat on medium heat
- When mozzarella starts to melt, keep stirring until cheese combines and fully melted
- Immediately wrap the drumettes and serve. Enjoy!
