- Chicken Marinade
- 700g Boneless Chicken Breast
- 12g Salt
- 12g Pepper
- 15g Cajun Seasoning
- 15g Onion Powder
- 30g Sun Dried Tomatoes
- Sauce
- 25g Garlic Minced
- 150g Sun Dried Tomatoes
- 15g Mustard
- 400g Cajun Seasoning
- 400g Anchor Extra Yield
- 400g Chicken Stock
- 150g Spinach
- 100g Anchor Grated Parmesan
- 25g Corn
- Other
- 400g Pasta
Instructions
- In a large bowl, mix chicken breast, salt, pepper, cajun seasoning, onion powder and sun dried tomatoes
- Marinade for at least 1 hour
- Pan sear the chicken in a skillet for 10 minutes, then turn to another side for another 10 minutes
- Prepare the sauce
- Saute the minced garlic and sun dried tomatoes
- Stir in the mustard, cajun seasoning and mix well
- Add in Anchor Extra Yield and chicken stock
- Bring to a simmer, and add in seared chicken breast
- Simmer chicken breast in the sauce for another 10 minutes, and add in spinach, Anchor Grated Parmesan and corn
- Remove chicken and slice accordingly
- Mix cooked pasta with tuscan sauce and add sliced chicken on top
