- 225g Anchor Unsalted Butter
- 50g sugar
- 50g brown sugar
- 20g egg yolk
- 5g vanilla extract
- 270g all purpose flour
- 25g corn flour
- 10g cocoa powder
- 10g red colouring
- 5g salt
- dessicated coconut, misc
Instructions
- Preheat oven to 175C
- Place softened Anchor Unsalted Butter in a bowl, and mix with sugar and brown sugar until light and fluffy
- Add the egg yolk and vanilla essence and mix well
- Sieve in the flour, corn flour and cocoa powder, mix well
- Add in food colouring and salt, and mix well
- Weigh out 10g of cookie, and roll into a ball
- Coat cookie in dessicated coconut an press the centre of the cookie
- Bake for 8-12 minutes or until fully cooked
