- Cookie:
- 227g Anchor Unsalted Butter
- 115g sugar
- 8g vanilla
- 5g cocoa powder
- 230g all purpose flour
- Caramel Ganache:
- 150g sugar
- 250g Anchor Whipping Cream
- 250g milk chocolate
- 3g salt
Instructions
- Preheat oven to 155C
- In a mixing bowl, mix Anchor Unsalted Butter, sugar, vanilla, cocoa powder, and flour together until crumbly
- Scoop 25g of the crumble into a ring mold and press down
- Bake for 16 minutes
- Prepare the filling by cooking sugar until golden brown
- Pour Anchor Whipping Cream and stir to combine. Add milk chocolate and salt.
- Set aside to cool
- To assemble, pipe filling in between two cookies and assemble like a sandwich.
