- 150g bananas
- 200g Anchor Unsalted Butter
- 40g vegetable oil
- 250g brown sugar
- 40g egg yolks
- 8g vanilla essence
- 330g all purpose flour
- 4g baking soda
- 15g cinnamon powder
- 3g salt
- 8g nutmeg powder
- 300g chocolate chips
Instructions
- Preheat oven to 180C
- In a mixing bowl, mix bananas, melted Anchor Unsalted Butter, vegetable oil, brown sugar, egg yolks, and vanilla essence
- Sift in the flour, baking soda, cinnamon powder, salt, and nutmeg powder
- Fold in the chocolate chips and set aside for flour to hydrate
- Scoop cookie batter with an ice cream scoop and roll into a ball
- Bake for 10-12 minutes. Cookie edges should have set and centre puffed up
- Set aside to cool
