Recipe Ingredient
- 650g pineapple - remove skin
- 3cm piece cinnamon stick
- 3 cloves
- Enough basic syrup or to taste
- Ice cubes or shaved ice
Instructions
- Chop pineapple flesh into cubes and liquidise to get the juice. Put juice aside and retain the pulp.
- Put pineapple pulp in a deep saucepan with one and a half cups water, cloves and cinnamon stick. Bring to the boil then simmer for 20 minutes. Strain, discard the pulp and spices and cool the pineapple syrup.
- Add the cooled syrup to the pineapple juice and combine enough basic syrup. Chill well in the refrigerator.
- To serve, pour into individual serving glasses and top up with crushed ice and add garnishing of your choice.
