Recipe Ingredient
- 2 cups (16 fl oz) watermelon juice
- 2 tablespoons chilli syrup
- 2 tablespoons lime juice
- Sprigs of fresh mint
- Chilli Syrup:
- 2 large red chillies
- 1/2 cup (125g) sugar
- 1/2 cup water
Instructions
- To make the chilli syrup, slit the chilli lengthwise and remove the seeds. Place the chilli, sugar and water in a small saucepan and bring to the boil. Reduce the heat and simmer for 5 minutes. Remove the chillies, cool the syrup and place in a jar or bottle. Store in the refrigerator until ready to use.
- Blend together the watermelon juice, chilli syrup and lime juice. Pour into glasses filled with ice, and garnish with sprigs of fresh mint.
