Recipe Ingredient
- 500g medium-large prawnsshelled but with tails intact
- Marinade
- ¼tsp salt
- 1tsp pepper
- ½tsp sugar
- ¼tsp bicarbonate of soda
- 1tsp egg white
- 1tbsp cornflour
- Batter
- 100g self-raising flour
- 200g rice flour
- 1tsp baking powder
- ½tsp salt
- 300ml water
- Mayo sauce ingredients
- 5tbsp mayonnaise
- 1tbsp calamansi juice
- salt and sugar to taste
- 2tbsp wasabi
- 1tsp toasted black or white sesame seeds
Instructions
- Season prawns with marinade for 20 minutes.
- Combine flours, baking powder and salt in a mixing bowl. Pour in water gradually to mix to a smooth batter.
- Heat oil in a wok and dip prawns in batter. Deep-fry until golden brown. Remove and place on kitchen paper towels.
- Combine mayonnaise with salt, sugar and calamansi juice to taste. Stir in wasabi. Sprinkle with sesame seeds.
- Serve sauce with the prawns.
