Recipe Ingredient
- 500g large prawns (peeled)
- 1 ltr sun flour oil
- 30g fresh bean sprouts
- 50g watercress
- 2 medium hot red chilli (seeded and sliced thinly)
- 1 tbls dark soya sauce
- 1 tbls black peppercorns (crushed)
- 60g cornflour
- 60g plain flour
- 1 tsp sea salt
- 1/2 tsp Chinese 5 spices (powder)
- 190ml ice-cold soda water (new bottle)
Instructions
- Sift the cornflour and flour into a bowl and mix in the peppercorns, salt and spices. Stir in the soda water until nearly mixed - the batter should be thin but still a little lumpy. (If it seems too thick - add more soda water).
- Heat the sun flour oil until shimmering. Dip the prawns into the batter and deep fry for approx. 1 minute. Transfer to a baking tray lined with kitchen roll and keep warm in a low oven.
- In the meantime mix together in a large bowl the chilli, watercress and been sprouts, season with salt and divide equally between 4 plates. Place a handful of fried prawns on top and drizzle soya sauce over the top. Serve immediately.
