Recipe Description
Chef Rram’s crispy and flavourful Fried Kandar Chicken is a required item for most Nasi Kandar enthusiasts.
Chef Rram Kumar is the Indian speciality chef at The Resort Café, Sunway Resort Hotel & Spa.
Recipe Ingredient
- 3kg chicken, cut into pieces
- 50g ginger juice
- 100g shallot juice
- 50g fennel seed
- 30g curry leaves
- 150g green chillies, chopped
- 3 eggs
- 60g turmeric powder
- 30g red chilli powder
- 50g meat curry powder
- 300g corn flour
- 150g rice flour
- few drops red colouring
- 2.5ml cooking oilfor deep-frying
Instructions
- In a mixing bowl, add all the above items and mix well. Keep for 3-4 hours or overnight in the fridge. Take out from fridge and leave it out at least 30 minutes before deep-frying.
