Recipe Ingredient
- 600g mud crabs
- 1 Tbsp cornflour
- Dash of pepper
- Enough oil for deep-frying
- 300ml fresh chicken stock
- 2-3 Tbsps oil
- 1/2 tsp sesame oil
- 1 Tbsp chopped garlic
- 1 Tbsp chopped shallots
- 1 Tbsp chopped red chillies
- 1 Tbsp hot soya bean sauce
- 1/4 tsp frshly cracked black peppercorns
- Sauce Ingredients:
- 2 Tbsp Premium oyster sauce
- 2 Tbsp black pepper sauce
- 1 Tbsp sugar
Instructions
- Cut crabs into halves, then rinse and drain well in a colander. Sprinkle with cornflour and pepper. Deep-fry crabs in hot oil until cooked through. Dish out and drain oil.
- Heat 2-3 Tbsp oil and 1/2 tsp sesame oil in a wok. Add garlic, shallots, soya bean paste and the rest of the sauce ingredients. Fry until fragrant. Pour in chicken stock and bring to a boil.
- Put in pre-fried crabs and stir well to mix. Cover the wok and bring to a simmer until gravy is thick and dry. Add in red chilli and sprinkle in freshly cracked black peppercorns.
- Dish out and serve immediately.
