Recipe Ingredient
- 12 pieces okra
- Juice of half a lemon
- Some ground black pepper
- Batter:
- 100g corn flour
- 100g plain flour
- 3/4 tsp baking powder
- 1/8 tsp pepper
- 1/2 tsp salt
- 1 tsp oil
- Enough water
- Dipping sauce
- 2 tbsp chilli sauce
- 1 1/2 tbsp tomato sauce
- 1 tsp lime juice
- 1/2 tsp sugar
- Salt to taste
Instructions
- Slice okra into half lengthways. Add a sprinkling of lemon juice and some ground black pepper.
- Combine batter ingredients in a mixing bowl.
- Add just enough water to form a smooth batter.
- Dip okra into batter and deep-fry in hot oil until crispy. Drip some batter over the okra when it is being deep-fried (this will create more crispy crumbs).
- Dish out okra and drain and serve with dipping sauce.
- Combine ingredients for the dipping sauce together and set aside.
