Recipe Ingredient
- 1 small sandwich loaf
- 10 eggs
- 2 tsp light soy sauce
- ½ tsp pepper or to taste
- Filling
- 150g minced meat (preferably pork)
- 75g cooked crab meat
- 75g finely diced prawns
- 2 dried Chinese mushrooms, soaked and diced
- 3 tbsp finely diced carrot
- 3 tbsp diced onion
- Ingredients (A)
- 5 shallots
- 2 cloves garlic
- 1 tsp coriander powder
- ¼ tsp pepper
- 2 tbsp oil
- Ingredients (B)
- 1 tsp sesame oil
- 1 tbsp oyster sauce
- 1½ tbsp light soy sauce
- Pinch of monosodium glutamate
- Pinch of pepper
- ¼ tsp Chinese five spice powder
- Dipping sauce (combined)
- ½ cup Worcestershire sauce
- 1 tbsp yellow mustard
- 2-3 tbsp sugar or to taste
- 2 red chillies, sliced
Instructions
- Heat 2 tablespoons oil in a nonstick saucepan. Fry ingredients (A) for 1-2 minutes over medium low heat until fragrant.
- Add minced meat and prawns. Stir-fry well.
- Add mushrooms and continue to fry for a while. Stir in onion and carrot to mix.
- Add ingredients (B), then toss and fry well. Dish out and add crab meat to mix.
- Trim off hard edges of bread. Put 1-2 tablespoons filling on a slice of bread. Top up with another slice. Press down to hold the filling.
- Hold the sandwiched bread slices firmly well together and dip thoroughly into the beaten egg. Heat enough oil in a wok until just hot. Gently release the sandwich bread into the hot oil. Deep-fry until golden brown. Do this in batches for easy handling.
- Dish out and serve with dipping sauce.
