Recipe Ingredient
- 500g turkey drumsticks, boned and cubed
- 1 carrot, cut into wedges
- 2 potatoes, cut into wedges
- 1/2 cup petai seeds
- 1/2 cup coconut milk
- 1/2 cup plain yoghurt
- 4 tbsp oil
- Spices (A)
- 4 shallots
- 3 cloves garlic
- 2cm piece ginger
- 3 tbsp meat curry powder
- 1 tbsp chilli paste
- 1cm piece galangal
- Spices (B)
- 2 stalks lemon grass, lightly smashed
- 1 star anise
- 3 cloves
- 2 cardamoms, split and use seeds only
- 2cm piece cinnamon stick
- 2 stalks curry leaves
- Seasoning
- 1 tsp salt or to taste
- 1/2 tsp sugar
- 1/2 tsp chicken stock granules
Instructions
- Heat oil in a wok and fry (A) and (B) until fragrant. Add turkey meat and fry for 3-4 minutes until meat changes its colour.
- Add carrot and potatoes to mix. Pour in coconut milk and bring to a boil then simmer until turkey meat turns tender.
- Stir in yoghurt and continue to cook for 3-4 minutes. Add petai and seasoning to taste. Dish out and serve.
