Recipe Ingredient

  • 500g turkey drumsticks, boned and cubed
  • 1 carrot, cut into wedges
  • 2 potatoes, cut into wedges
  • 1/2 cup petai seeds
  • 1/2 cup coconut milk
  • 1/2 cup plain yoghurt
  • 4 tbsp oil
  • Spices (A)
  • 4 shallots
  • 3 cloves garlic
  • 2cm piece ginger
  • 3 tbsp meat curry powder
  • 1 tbsp chilli paste
  • 1cm piece galangal
  • Spices (B)
  • 2 stalks lemon grass, lightly smashed
  • 1 star anise
  • 3 cloves
  • 2 cardamoms, split and use seeds only
  • 2cm piece cinnamon stick
  • 2 stalks curry leaves
  • Seasoning
  • 1 tsp salt or to taste
  • 1/2 tsp sugar
  • 1/2 tsp chicken stock granules

Instructions

  1. Heat oil in a wok and fry (A) and (B) until fragrant. Add turkey meat and fry for 3-4 minutes until meat changes its colour.
  2. Add carrot and potatoes to mix. Pour in coconut milk and bring to a boil then simmer until turkey meat turns tender.
  3. Stir in yoghurt and continue to cook for 3-4 minutes. Add petai and seasoning to taste. Dish out and serve.
