Recipe Ingredient
- 10 large prawns
- 2 stalks lemongrass, crushed
- 5 bird´s eye chillies
- 3 shallots, peeled and keep whole
- 4 slices ginger, shredded
- 2 fresh red chillies
- 2 green chillies
- 1/2 tsp chilli powder
- 1/2 tsp turmeric powder
- 1/2 a blade turmeric leaf
- 2 tbsp tempoyak (fermented durian)
- 300ml thick coconut milk
- 200ml water
- Seasoning:
- 1 tsp salt or to taste
- 1 tbsp sugar or to taste
- 1 tsp chicken stock powder
Instructions
- Bring water, lemongrass, bird´s eye chillies, shallots and ginger shreds to a boil for 5-6 minutes.
- Add all chillies, turmeric powder, chilli powder and turmeric leaf. Simmer for 10 minutes. Add coconut milk, tempoyak and prawns.
- Adjust with seasoning to taste and cook until prawns turn to a red colour or are cooked through. Serve hot.
