Recipe Ingredient
- 10 large prawns, trimmed
- 1 onion, chopped
- 3-4 tbsp oil
- 250ml coconut milk
- 2 stalks lemon grass, smashed (Ground spice ingredients)
- 3 slices galanggal
- 5 dried chillies, soaked and seeded
- 10 fresh red chillies
- 3 cloves garlic
- 1 thumb size fresh turmeric or 1½ tsp turmeric powder
- 2 candlenuts
- 1 tsp belacan stock granules
- Seasoning
- ½ tsp salt or to taste
- 1 tsp sugar
- ½ tsp chicken stock granules
- ¼ tsp ikan bilis stock granules
Instructions
- Heat oil in a saucepan and sauté onion until soft and fragrant. Add ground spice ingredients and lemon grass. Fry until aromatic.
- Add prawns and coconut milk then bring to a boil. Adjust with seasoning to taste. Serve immediately.
