Recipe Ingredient
- 700g mutton, cut into bite-sized pieces
- 200g potatoes, cubed and deep-fried until cooked through
- Grated coconut, squeezed for thick coconut milk; then add 2 cups water and squeeze for thin coconut milk
- 1/2 cup oil
- Spices (A):
- 4–5 cm piece cinnamon stick
- 2 star anise
- 6 cloves
- 4 cardamoms, split and use seeds only
- 2 sprigs curry leaves
- 2 stalks lemon grass, bruised
- Ground ingredients (B):
- 13–14 shallots
- 6 cloves garlic
- 4 cm piece ginger
- 2 cm galangal
- 10 fresh red chilies
- 10 dried chillies, soaked and seeds removed
- (C):
- 2 tbsp meat curry powder
- 1 tsp fennel
- Seasoning:
- 1 tsp salt
- 1 tbsp sugar
- 1 tbsp lime juice
Instructions
- Heat oil in a saucepan and fry ingredients A until fragrant. Add in B and C and continue to fry for 3-4 minutes until oil rises.
- Put in mutton and water. Bring to a boil. Reduce heat and simmer for 40-50 minutes.
- Pour in coconut milk and add potatoes and continue to cook until meat is tender. Season to taste.
