Recipe Ingredient
- 150g dried chillies
- 200g coriander seeds
- 75g cumin seeds
- 75g fennel seeds
- 30g peppercorns
- 30g turmeric
- 3 cardamom pods
- 5 cloves
- 5cm piece cinnamon bark
Instructions
- Wash all the spices and dry them in the sun or roast them in a dry pan or wok. Cool well, then store the ingredients in an airtight container.
- Once they´re dried, you can either send the ingredients to a mill or liquidise them yourself.
- For added flavour, use galangal, lemon grass, belacan and candlenuts when cooking your dish.
