Recipe Ingredient

  • 10 large prawns
  • 5-6 tbsps oil
  • 1 brinjal, sliced
  • 3 lady´s fingers
  • 1 green chilli, halved and seeded
  • 1 red chilli, halved and seeded
  • 1 tomato, quartered
  • 100ml evaporated milk
  • Spice (A)
  • 1 stalk curry leaves
  • 1 tsp halba seeds
  • 1 onion, halved and sliced
  • 2 cloves garlic, sliced
  • 2 stalks lemon grass
  • Spice (B) - Combine, add a little water and mix into a paste
  • 2 tbsps seafood curry powder
  • 1 tbsp chilli powder
  • Seasoning
  • 2 tbsps asam jawa, mixed with 150ml water
  • Salt to taste
  • 1 tbsp sugar

Instructions

  1. Heat oil and fry halba seeds until fragrant. Add curry leaves and lemon grass. Continue to fry for a while.
  2. Add garlic and onion and fry until fragrant. Add spice (B). Sauté until fragrant.
  3. Add lady's fingers, brinjal, tomato and red and green chillies. Pour in asam jawa juice and bring to a boil.
  4. Add in prawns and pour in evaporated milk. Adjust with salt and sugar to taste. Dish out and serve.
