Recipe Ingredient
- 4 bird´s eye chillies (cili padi)
- 2 fresh green chillies, halved and seeded
- 3 shallots
- 4 cloves garlic
- 1/4 tsp finely sliced limau purut rind or zest
- 1/2 tsp chopped coriander root (yin sai root)
- 1/2 tsp finely sliced galangal
- 1/2 tbsp sliced lemon grass (use the white portion only)
- 1/4 tsp coriander powder
- 1/4 tsp ground white pepper
- 1/2 tsp belacan stock granules
- 1/2 tbsp fish sauce
- 1/2 tbsp sugar
Instructions
- To prepare the green curry paste, combine all ingredients in a food processor. Process until smooth. Chill the mixture in a clean glass jar.
