Recipe Ingredient
- 2 Mission Wrap (chive & onion)
- 100g chicken breast
- 50g coconut milk
- 1/2 red onion
- 2 cloves garlic
- 1in ginger
- 1 red chilli
- 1 tbsp curry powder
- 1/2 tbsp cumin powder
- 1/2 tbsp fennel powder
- A bit fresh coriander
- 1 tbsp red apple
- 1 tbsp cashew nuts
- 20g cherry tomatoes
- 20g iceberg lettuce
- olive oil
- salt, pepper to taste
Instructions
- Cut chicken into medium-sized cubes and sear on a pan with a bit of olive oil.
- Add sliced onions, garlic, chilli and ginger and cook until onions are golden.
- Add spices, followed by sliced apple and toasted cashew nuts.
- Add water and coconut milk.
- Cook the curry for 5 mins.
- Preheat the wrap either in pan or oven until just warm and soft.
- Roll the tortilla wrap with curry and sliced iceberg lettuce and cherry tomatoes.
