Recipe Ingredient
- 150g minced prawn meat
- 2 water chestnuts, chopped
- 1 shallot, finely chopped
- 1 clove garlic, finely chopped
- 1 tbsp oil
- 1/2 tsp sesame oil
- 1 tbsp fish curry powder
- 1 tbsp chopped spring onions
- Seasoning:
- 3/4 tsp salt or to taste
- 1/2 tsp sugar or to taste
- 1/8 tsp pepper
- 1 tsp oyster sauce
- 1/2 tsp sesame oil
- 1/2 tsp light soy sauce
- 30-34 wanton skins
- Enough oil for deep-frying
- Flour paste (mixed together):
- 2 tbsp plain flour
- 3-4 tbsp water
Instructions
- Heat oil and sesame oil in wok and fry shallot, garlic and curry powder until fragrant.
- Add minced prawns and water chestnuts. Stir-fry until heated through. Add seasoning to taste. Remove from heat and set aside. Mix in chopped spring onion.
- Place wanton wrappers on a dinner plate and cover with a clean tea towel. Take one piece of wanton wrapper at a time and brush the edges with flour paste.
- Place 1 teaspoon of the prawn filling onto the centre of the wrapper, then place another piece of wanton wrapper on top.
- Press the edges of the wanton pieces together to seal in the filling. Brush the top of the wanton with a little of flour paste and sprinkle with sesame seeds.
- Continue with the rest of the wrappers and filling. Heat oil in a wok and deep-fry the wantons a few at a time until golden.
- Drain and serve with any one of the dipping sauces above.
