- 125g superfine flour
- 50g cornflour
- 1/2 tsp baking powder
- 1 tbsp fennel powder
- 1/4 tsp salt
- 75g castor sugar
- 80g butter
- 3 tbsp hot water
- Topping:
- Extra toasted fennel seeds
Instructions
- Lightly grease baking trays and preheat oven at 175°C.
- Sift flour and cornflour into a mixing bowl. Add fennel powder, baking powder, salt and sugar to mix.
- Combine butter with hot water then add to the flour mixture. Lightly knead into a soft dough.
- Lightly form dough into cherry-sized balls. Dip into toasted fennel seeds and place on prepared trays. Press down lightly with a fork. Bake for 15 to 17 minutes or until lightly browned in colour. Allow to cool for one minute on the trays before transferring onto wire racks to cool completely.
