Recipe Ingredient

  • Cakoi Ingredients:
  • 300g All Purpose Flour
  • 150g Water
  • 150g Anchor UHT Fresh Milk
  • 2g Salt (1/2tsp)
  • 10g Sugar (2tsp)
  • 5g Baking Soda (1tsp)
  • 5g Dry Yeast
  • 15g Anchor Unsalted Butter
  • 10g Cooking Oil
  • Stuffing Ingredients:
  • 150g Prawns Meat
  • 50g Diced Carrot
  • 15g Sliced Spring Onion
  • 12g Light Sauce Sauce (1tbsp)
  • 5g Sesame Oil (1tsp)
  • 5g Sugar (1tsp)
  • 2g White Pepper (1/2tsp)
  • 30g Corn Flour
  • 100g Anchor Classic Shredded Mozzarella
  • Parmesan Curry Mayo:
  • 150g Mayonnaise
  • 15g Curry Powder
  • 1g Salt (to taste)
  • 1g Course Black Pepper (to taste)
  • 20g Perfect Italiano Grated Parmesan
  • Other Ingredients:
  • 10g Mix Toasted Sesame

Instructions

    Cakoi Dough:
  1. Using a dough mixer, add all-purpose flour, salt, sugar, baking soda and instant yeast into the mixing bowl.
  2. Then add the mixture of water, milk & butter, mix until smooth dough forms.
  3. Place prepared dough in a bowl & rub the surface of the dough with a thin layer of oil.
  4. Let the dough rest & rise for 1 hour.
  5. Cutting And Shaping:
  6. Dust your working area with flour, place the dough & flour on the surface.
  7. Roll into 3 – 4 mm thickness rectangular shape & cut 1" width.
  8. Stand by a bowl of clean water and a clean bamboo skewer.
  9. Lightly moist the middle line of the dough with a wet skewer.
  10. Once the middle line is moist, place the non-lined piece of dough on top of the lined dough.
  11. Gently press with a wet skewer on the middle to ensure that the top piece sticks to the bottom piece.
  12. Deep Frying:
  13. Preheat cooking oil to 180°C in a frying pan.
  14. Carefully lift up a piece of dough and slightly stretch it and put it into the hot oil.
  15. Do turn it consistently to ensure it is well fried.
  16. Once it turns golden all around, transfer to a plate and set aside.
  17. For Stuffing:
  18. Blend prawn meat in a food processor until smooth, transfer to a bowl.
  19. Add in all remaining ingredients, mix well.
  20. Cover with cling wrap & keep in the chiller for 1 hour.
  21. Parmesan Curry Mayo:
  22. Add all ingredients to a bowl, stir well & keep chill.
  23. To Assemble:
  24. Preheat oven with 160°C.
  25. Cut cakoi into 3" size and then cut the middle, add the stuffing.
  26. Bake in the oven for 12minutes, set aside.
  27. Place the stuffed baked cakoi on a plate, sprinkle with sesame.
  28. Serve with dipping sauce together with prepared Stuffed Baked Cakoi. Enjoy!
