Recipe Ingredient

  • 1:
  • 267g brown sugar
  • 2g nutmeg powder
  • 2.7g cloves powder
  • 1g cinnamon powder
  • 1 lemon, squeeze juice
  • 1 lemon, get the rind
  • 334g icing sugar
  • 2:
  • 334g dried apple, diced
  • 334g dried raisin
  • 467g mix peel
  • 500g black currant
  • Mince pie dough (3):
  • 667g puff pastry dough
  • 1.333kg sugar dough
  • Sugar Dough:
  • 840g flour
  • 3 eggs
  • 300g icing sugar
  • 480g butter

Instructions

  1. Sugar Dough: Mix all ingredients well using a paddle attachement of the mixer until it becomes dough.
  2. You only need 33kg of the dough for the Christmas Mince Pie recipe.
  3. Mince pie: Mix well the puff dough and sugar dough till it becomes mince pie dough.
  4. Pre-heat the oven at 180 degrees Celcius.
  5. Mix well ingredient using paddle attachment of the mixer until it becomes a juicy filling.
  6. Add in ingredient and mix well.
  7. Roll the mince pie dough till 1mm thickness, divide the dough and roll into small balls.
  8. Press the prepared portion of dough into the aluminum mould, spoon some mince pie filling inside the dough.
  9. Top the pies with their lids, pressing the edges gently together to seal casing.
  10. Form some shapes and decorate the top of the mince pie dough. Brush the tops using egg wash.
  11. Bake at 180 degrees Celcius for 20 minutes until it is golden brown.
