Recipe Ingredient
- 250g margarine
- 135g icing sugar, sifted
- 1 tsp vanilla essence
- 1-2 tsp rum essence (optional)
- 2 egg yolks
- 1½ tsp chocolate paste
- 80g semi-sweet chocolate chips
- 50g ground almonds
- 425g plain flour sifted twice
- 25g cocoa powder
- 100g chopped nuts (or any other nuts of your choice)
Instructions
- Preheat oven to 180°C. Grease several baking trays with melted margarine or corn oil.
- Cream margarine with icing sugar until light and fluffy. Beat in essence, egg yolks and chocolate paste. Stir in chocolate chips and nuts.
- Mix in the sifted flour and cocoa mixture. Stir in ground almonds to mix.
- Using two teaspoons drop slightly rounded teaspoonfuls of dough on the prepared trays allowing space between for spreading during baking.
- Bake for about 15-20 minutes or until lightly browned. Cool on wire racks before storing in air-tight containers.
