Recipe Ingredient
- 2 tbsp sesame oil
- 100g prawns, shelled and cut into halves
- 1-2 tbsp oil
- 3 salted egg yolks, steamed for 2-3 minutes and lightly mashed
- 2 tbsp diced carrot
- 2 egg yolks, lightly beaten
- 3 bowls cooked rice, cooled
- Seasoning:
- ¾ tsp salt
- 1 tsp pepper
- ¾ tsp sugar or to taste
- ½ tsp chicken stock granules
- 1 tsp oyster sauce
- Garnish:
- Some chopped red chillies
Instructions
- In a wok, heat the sesame oil and fry prawns until cooked. Dish out and set aside.
- Add oil to the wok. When oil is heated, add salted egg yolks and break up with the spatula until mixture turns bubbly. Add the carrot and fry well.
- Mix egg yolks with the rice and add to wok. Add seasoning to taste. Fry until fragrant and heated through over high heat. Return prawns to wok and continue to fry with the rice until well combined. Turn off the heat and add garnishing.
