Recipe Ingredient

  • 400g mock chicken meat
  • 2 potatoes, cut into wedges
  • 2 green chillies, halved, seeded and cut into wedges
  • (A) - Ground and combined:
  • 8 shallots
  • 3 cloves garlic
  • 2 tbsp chilli paste
  • 2½ tbsp meat curry powder
  • 1/2 tsp turmeric powder
  • 1.5cm piece ginger
  • 4 candlenuts
  • 2cm piece galangal
  • (B) - Spices:
  • 4cm piece cinnamon stick
  • 1 star anise
  • 4 cloves
  • 2 cardamom pods, split
  • 2 stalks lemon grass, smashed
  • 1 pandan leaf, shredded and knotted
  • 2 stalks curry leaves
  • 4 tbsp oil
  • 3/4 cup thin coconut milk
  • 1/4 cup thick coconut milk
  • 1 tomato, quartered
  • Seasoning:
  • 1 tsp salt or to taste
  • 1/4 tsp sugar

Instructions

  1. Rub a little salt on mock chicken pieces and set aside. Parboil potatoes until just cooked.
  2. Fry ingredients (B) in hot oil for 1/2-1 minute. Add (A) and continue to fry until oil rises and separates.
  3. Put in mock chicken, potatoes, thin coconut milk and bring to a boil then lower the heat and simmer for 4-5 minutes.
  4. Add green chillies and tomato. Add thick coconut milk and bring to a low simmering boil. Add seasoning to taste and dish out to serve.
