Recipe Ingredient
- 400g mock chicken meat
- 2 potatoes, cut into wedges
- 2 green chillies, halved, seeded and cut into wedges
- (A) - Ground and combined:
- 8 shallots
- 3 cloves garlic
- 2 tbsp chilli paste
- 2½ tbsp meat curry powder
- 1/2 tsp turmeric powder
- 1.5cm piece ginger
- 4 candlenuts
- 2cm piece galangal
- (B) - Spices:
- 4cm piece cinnamon stick
- 1 star anise
- 4 cloves
- 2 cardamom pods, split
- 2 stalks lemon grass, smashed
- 1 pandan leaf, shredded and knotted
- 2 stalks curry leaves
- 4 tbsp oil
- 3/4 cup thin coconut milk
- 1/4 cup thick coconut milk
- 1 tomato, quartered
- Seasoning:
- 1 tsp salt or to taste
- 1/4 tsp sugar
Instructions
- Rub a little salt on mock chicken pieces and set aside. Parboil potatoes until just cooked.
- Fry ingredients (B) in hot oil for 1/2-1 minute. Add (A) and continue to fry until oil rises and separates.
- Put in mock chicken, potatoes, thin coconut milk and bring to a boil then lower the heat and simmer for 4-5 minutes.
- Add green chillies and tomato. Add thick coconut milk and bring to a low simmering boil. Add seasoning to taste and dish out to serve.
