Recipe Ingredient
- 4 pieces chicken drumsticks, boned
- 3/4 tsp salt
- Marinade - (ground and combined)
- 5 shallots
- 3 cloves garlic
- 2 stalks lemon grass
- 2cm piece galangal (lengkuas)
- 50g ginger
- 2cm piece fresh turmeric
- 3 candlenuts (buah keras)
- 1½ tbsp chilli paste (chilli boh)
- 1½ tbsp coriander powder
- Seasoning
- 1 tbsp salt
- 5 tbsp castor sugar
- 2 tbsp tomato paste
Instructions
- Season chicken with salt for 10-15 minutes. Put chicken into a deep saucepan, add enough water to cover the chicken, then bring to a boil for 8-10 minutes. Drain well.
- Combine ground marinade ingredients with the seasoning. Brush the marinade over the chicken and leave aside to marinate for at least 2 hours. Place the marinated chicken on a roasting rack and grill in a preheated oven at 200°C for 40-45 minutes, brushing occasionally with a little corn oil until meat is cooked through or golden brown.
