Recipe Ingredient
- 5 chicken drumsticks
- 1 tbsp light soy sauce
- 3 tbsp oil
- Ground spices (A):
- 6 shallots
- 4 cloves garlic
- 1.5cm piece galangal
- 2 stalks lemon grass
- 4 tbsp chilli paste
- 3 kaffir lime leaves, sliced
- 200ml thin coconut milk
- 3 tbsp lime juice
- 1 tbsp sugar or to taste
- 1 tbsp fish sauce
Instructions
- Marinate chicken with light soy sauce for 20-25 minutes.
- Heat oil and fry ground (A) until fragrant. Add in chicken and stir to mix.
- Pour in coconut milk and bring to a low simmering boil for 8-10 minutes.
- Add lime juice, sugar and fish sauce and continue to simmer for 4-5 minutes until sauce turns thick.
- Dish out and set aside.
- Wrap chicken drumsticks in foil then barbecue over a hot barbecue pit for 8-10 minutes, turning over frequently.
