Recipe Ingredient
- 2 pieces (385g net weight) deboned chicken whole leg
- 3 tbsp cornflour
- Oil for deep-frying
- Seasoning (A):
- ¼ tsp salt
- ¼ tsp pepper
- ¼ tsp bicarbonate of soda
- Sauce (B):
- ¼ cup freshly squeezed orange juice
- 1 tbsp lemon juice
- 1 tbsp finely chopped orange flesh
- 1 tbsp sugar
- 1 tsp white vinegar
- 1/8 tsp salt
- ½ tsp custard powder
- ¼ cup water
- Onion rings:
- 1 onion, cut into rings
- 3 tbsp cornflour
- 2 tbsp plain flour
- Dash of pepper
- 1 tbsp rice flour
- Enough water
Instructions
- Marinate chicken meat with seasoning (A) for at least 30 minutes or preferably 2-3 hours.
- Just before deep-frying, sprinkle cornflour evenly on marinated chicken, both on the skin and meat part.
- Heat oil in a wok over medium heat, deep-fry chicken until golden brown and cooked through.
- Combine sauce (B) ingredients and simmer in a non-stick saucepan until gravy is fairly thick.
- Cut chicken into serving slices and serve with the orange sauce and crispy onion rings.
- To make onion rings: Toss onion rings in 2 tbsp cornflour. Combine plain flour, remaining cornflour, pepper and rice flour in a bowl. Add enough water to make a runny batter. Dip onion rings in the batter and deep-fry in hot oil until onion rings turn crispy. Remove, drain and serve.
