Recipe Ingredient
- 900-1000g chicken or pork fillet meat, minced
- Marinade:
- 2-2½ tbsp light soy sauce
- 1 tbsp nampla (fish sauce)
- 1 tbsp oyster sauce
- 1/2 tsp Chinese five spice powder
- 1/2 tsp pepper
- 1/2 tbsp Shao Hsing Hua Tiau cooking wine
- 2 tbsp water
- 180g rock sugar
Instructions
- Blend rock sugar in a food processor or blender until fine and powder-like. Do this in stages to prevent the blades of your machine from being spoilt.
- Mix the marinade ingredients in a large mixing bowl. Add minced meat (chicken or pork as preferred). Mix well to blend and set aside for 1-2 hours.
- Spread out small portions of the marinated meat on a baking tray and sun it on a hot day for approximately 3-4 hours until the pieces are completely dry.
- Grill the meat over a charcoal pit until done.
