Recipe Ingredient

  • 900-1000g chicken or pork fillet meat, minced
  • Marinade:
  • 2-2½ tbsp light soy sauce
  • 1 tbsp nampla (fish sauce)
  • 1 tbsp oyster sauce
  • 1/2 tsp Chinese five spice powder
  • 1/2 tsp pepper
  • 1/2 tbsp Shao Hsing Hua Tiau cooking wine
  • 2 tbsp water
  • 180g rock sugar

Instructions

  1. Blend rock sugar in a food processor or blender until fine and powder-like. Do this in stages to prevent the blades of your machine from being spoilt.
  2. Mix the marinade ingredients in a large mixing bowl. Add minced meat (chicken or pork as preferred). Mix well to blend and set aside for 1-2 hours.
  3. Spread out small portions of the marinated meat on a baking tray and sun it on a hot day for approximately 3-4 hours until the pieces are completely dry.
  4. Grill the meat over a charcoal pit until done.
