Recipe Ingredient
- 75g chicken fillet, diced
- 50g carrot, diced or cut into thin slices and halved
- 40g fresh corn kernels
- 50g cauliflower, cut into small bite-sized pieces
- 1¼ cups water
- 3/4 cup long grain rice, washed and drained
- (A):
- 1 clove garlic, lightly smashed
- 1 tbsp chopped Bombay onion
- 2cm piece ginger, lightly smashed
- 2 broken-up pips from one star anise
- 2 cloves
- 1 pandan leaf, shredded and knotted
- Seasoning (B):
- 1/4 tsp salt
- 1/2 tsp sugar
- 1/2 tsp light soy sauce
Instructions
- Bring water to a boil. Add in chicken, carrot and cauliflower to cook for 10-15 minutes.
- Stir in rice and corn kernels. Add ingredients (A) and seasoning (B). Bring to a boil again.
- Cook until water is absorbed then lower the heat and continue to cook covered until rice is done.
- Stand rice for 10-15 minutes before dishing out to serve your 2-3-year-old toddler.
- Throw in some raisins to make the dish more tempting.
