Recipe Ingredient

  • 75g chicken fillet, diced
  • 50g carrot, diced or cut into thin slices and halved
  • 40g fresh corn kernels
  • 50g cauliflower, cut into small bite-sized pieces
  • 1¼ cups water
  • 3/4 cup long grain rice, washed and drained
  • (A):
  • 1 clove garlic, lightly smashed
  • 1 tbsp chopped Bombay onion
  • 2cm piece ginger, lightly smashed
  • 2 broken-up pips from one star anise
  • 2 cloves
  • 1 pandan leaf, shredded and knotted
  • Seasoning (B):
  • 1/4 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp light soy sauce

Instructions

  1. Bring water to a boil. Add in chicken, carrot and cauliflower to cook for 10-15 minutes.
  2. Stir in rice and corn kernels. Add ingredients (A) and seasoning (B). Bring to a boil again.
  3. Cook until water is absorbed then lower the heat and continue to cook covered until rice is done.
  4. Stand rice for 10-15 minutes before dishing out to serve your 2-3-year-old toddler.
  5. Throw in some raisins to make the dish more tempting.
