Recipe Ingredient
- 300g dried spiral pasta
- 400g chicken breast fillet, trimmed
- 70g sun-dried tomatoes, chopped
- 50g baby rocket
- 1 clove garlic, crushed
- 2 tbsp olive oil
- ½ cup mayonnaise
- 1 tbsp mustard
- Salt, sugar and pepper to taste
Instructions
- Cook pasta in a large saucepan of boiling salted water, following packet instructions until al dente. Drain.
- Heat 1 tablespoon olive oil in a saucepan and fry chicken until cooked through.
- Remove and leave aside for 5-10 minutes. Shred the meat.
- Add remaining oil to the pan and add garlic. Fry briefly until aromatic.
- Dish out and mix with the pasta. Add shredded chicken to the pasta. Mix in sun-dried tomatoes.
- Combine mayonnaise with mustard.
- Add salt, sugar and pepper to taste. Add pasta and baby rocket.
- Toss to combine.
- Serve.
