Recipe Ingredient
- 1 small chicken (preferably black chicken), approx 600g
- 150g black beans, washed and drained
- 10g old ginger, smashed
- 3 dried Chinese red dates, seeded
- 1½ cups Chinese rice wine
- 3/4 cup water
- 2 tbsp sesame oil
- Salt to taste
Instructions
- Skin chicken and wash thoroughly then chop into 4 pieces.
- Heat sesame oil in a wok and fry ginger until fragrant.
- Add black beans and continue to fry for 2-3 minutes.
- Add chicken and fry until heated through.
- Dish out all the ingredients into a double-boiler and pour in the rice wine and water.
- Cover and double-boil for 2½-3 hours over gentle heat.
- Add salt to taste and serve hot.
