Recipe Ingredient
- 6 eggs
- 1 kg ratatouille
- salt and pepper to taste
Instructions
- Preheat the oven to 150°C. In a mixing bowl, beat the eggs until foamy with a wire whisk and stir in the ratatouille.
- Season to taste with salt and freshly ground pepper. Pour into a non-stick loaf pan and bake for 1 hour, or until a skewer inserted into the centre comes out clean.
- Allow to cool and remove from the mould. Serve warm with a salad.
