- 275g butter
- 220g castor sugar
- 5 eggs
- 1 tsp vanilla essence
- 2 tbsp UHT milk
- Sift:
- 235g plain flour
- 2 tsp baking powder
- Combine:
- 60g toasted walnuts, coarsely chopped
- 50g sultanas
- 1 tbsp flour
Instructions
- Line and grease a 21cm cake pan. Preheat oven to 170ºC.
- Cream butter and sugar in a mixing bowl until light and creamy. Add eggs one at a time, beating well after each addition. Add vanilla essence and beat until light and fluffy. (If mixture curdles, add a little flour.)
- Fold in flour and baking powder and add milk gradually. Mix in walnuts and sultanas. Turn mixture into prepared pan and bake for 50-60 minutes or until done when tested with a wooden skewer.
