- 100 g butter
- 100 g cream cheese
- 90 g castor sugar
- 1 tsp grated lemon rind
- 1/2 tsp vanilla essence
- 2 big eggs (Grade A)
- Sifted:
- 120 g plain flour
- 1/2 tsp baking powder
- 1/4 tsp bicarbonate of soda
- 1/8 tsp salt
- 50 ml whipping cream
- 70 g coarsely chopped fresh pineapple
- 2 tbsp almond nibs
Instructions
- Line and lightly grease a 20 cm cake pan. Preheat oven at 180°C.
- Cream butter, cream cheese, sugar, lemon rind and vanilla essence until light and fluffy.
- Beat in eggs, one at a time, and beat well after each addition.
- Add in sifted dry ingredients and salt. Stir in whipping cream and chopped pineapple.
- Pour batter into prepared cake tin. Sprinkle almond nibs over and bake in preheated oven for 30-35 minutes or until cooked when tested with a skewer.
