- 200g butter
- 250g soft brown sugar
- 2½ tsp vanilla essence
- 300g cocoa powder
- 220g self-raising flour
- ½ tsp bicarbonate of soda
- 5 large eggs, beaten
- 230g good quality dark chocolate, chopped
- 80g macadamia nuts, chopped
Instructions
- Preheat oven to 180°C and line a lamington tin with non-stick parchment paper.
- Melt the butter in a deep saucepan and stir in soft brown sugar and vanilla essence over a low heat. Remove and leave aside to cool slightly for 10-15 minutes. Sift in cocoa powder and stir in beaten eggs until well blended. Sift in self-raising flour, bicarbonate of soda and add the chopped macadamia nuts and chocolate to mix.
- Pour the mixture into prepared tin. Bake for 40-45 minutes, then cool and cut into serving pieces.
