Recipe Ingredient
- 180gm butter
- 100 gm sugar
- 200gm plain flour
- 1 tbs corn flour
- 1 tsp custard flour
- ½ tsp lemon oil
- 1 tsp lemon rind
- 30gm croquant
- 30gm almond nibs
- Garnish
- 200gm melted white chocolate
- 50gm croquant
Instructions
- Mix everything in a bowl and knead gently to form a soft dough.
- Roll out the dough to 1/8in thickness and cut using a cookie cutter.
- Arrange the cookies in a greased tray and bake at 180 degrees Celcius for 15mins.
- Decorate with white chocolate and croquant.
- Note: Keep the melted chocolate bowl over hot water so that the chocolate won´t set and it will be easier to dip the cookies into the chocolate.
